Basil–Kissed Veggie Scrambled Eggs with Strawberries and Whole-Grain Buttered Toast!

An egg scramble is just the perfect high protein, low calorie meal to make when you have small bits of leftover vegetables! Even if I only have a little left after dinner, I always keep everything so that I can add quick volume and nutrition to my breakfast in the morning.

It's great to get a good chunk of my daily fiber at the beginning of my day too, and adding some strawberries and a nice piece of whole-grain toast definitely has me on my way! So much nutrition in this breakfast, and not a lot of calories!

In a non-stick skillet coated with cooking spray, scramble together:
150ml Egg Whites
1 Egg
6 Cooked Mushrooms
41g Cooked Broccoli
1 tbsp Fresh Basil

Serve with:
126g Fresh Strawberries
1 slice Whole Grain Toast w/5g Butter

Makes 1 serving: 34g Protein, 9g Fiber, 371 Calories
