Black Eyed Peas with Ham & Kale!

A nourishing one pot meal for a great start to a healthy and prosperous new year! If you have time, soak the beans in plain water overnight. If not, no problem, it will just take them a little longer to cook.

Ingredients:

1/2 lb dried Black Eyed Peas
8 oz Baked Ham, cut into large pieces
1 tsp Olive Oil
1 Onion, diced
2 Carrots, diced
2 stalks Celery, diced
200g Kale, chopped
32 oz Kirkland Chicken Bone Broth
16 oz Water
Salt & Pepper

Instructions:

  1. Sauté the onion, carrots, and celery in the olive oil in a medium sized soup pot for about 3 minutes.

  2. Season the vegetables with salt & pepper.

  3. Add the ham and cook for another couple of minutes.

  4. Add the kale, black eyed peas, bone broth, and water, and bring to a boil.

  5. Reduce to a simmer and cook, partially covered, until the beans are cooked (approximately an hour for pre-soaked beans).

  6. Season to taste with salt and pepper toward the end of the cooking process.


Makes 4 servings: 36g Protein, 10g Fiber, 407 Calories per serving
